4 servings:
4 eggs 2 cups flour
4 tea cups of milk salt
oil or butter to grease the crêpe griddle or frying pan for Christmas I
last year I made mixed with two fillings:
cooked radicchio and asiago and fontina béchamel
In a bowl, mix the flour with an egg, then another and then add milk and salt. Be careful not to form lumps. Grease a crêpe griddle or frying pan and make the crepes. They should at least venirvene 16.
Grease two ramekins and spread a few tablespoons of sauce in each. Aside from the stuffed crepes: lying a slice of cooked and 5 or 6 cubes of fontina cheese on one half of 8 crepes. Add a spoonful of sauce and stow it in half and then in half again, forming a wedge. Place them in the pan, sprinkle with white sauce and parmesan cheese. Put some butter and informed at 200 degrees for 20 minutes and then for 5 minutes with the grill.
Separately in a pan for a couple of minutes to dry the radicchio (which is the sweet, late or no Treviso ... if it tastes too bitter), salt and pepper.
Stuff the crepes with a little remaining 'radicchio, 5 or 6 cubes Asiago cheese and a spoonful of sauce. Close to four each crepe and place them in the second pan. Cover with the sauce, parmesan cheese and butter, and cook as before.
