Miele Vs. Riccar 2010

asiago and parmesan

I found this recipe on the Internet years ago, but I do not remember where ...
ask for forgiveness!

Ingredients 300 gr. flour (150 gr. of 00 and 150 gr. manitoba)
120 ml of water

80 ml of milk 1 / 2 cube fresh yeast 1 tablespoon oil

1 teaspoon salt 1 / 2 teaspoon sugar 1 packet saffron

150 gr.
plenty of grated Parmesan cheese Freshly ground black pepper

Dissolve the yeast in 120 grams of warm water, add milk, oil, salt, saffron and sugar and pour into the machine.
Add the flour and Parmesan cheese.
Select the program mix.
At the end of fermentation, remove the dough, roll into balls the size of a tangerine and work as for kissing (in order to make a very smooth surface). Place them on a baking sheet covered with baking paper, brush with milk and sprinkle with pepper. Let rise in oven heated to 100 degrees but off for at least 45 minutes.
Bake in preheated oven at 190 g for 15-20 minutes.
